Beans baked with bacon and roasted potatoes

Ingredients

  • Yellow wax beans Hortex 200g
  • Potatoes 1 kg
  • Smoked bacon 200 g
  • Lemons 2

Preparation

Step 1

Wash the potatoes well and nick at interstice of 3 mm, but do not cut them through.

Step 2

Whisk olive oil with grated lemon peel, lemon juice, chopped rosemary and spices.

Step 3

Rub the marinade into the potatoes then bake them on a baking tray lined with baking paper in an up to 180 °C preheated oven for ca. 40 minutes.

Step 4

Blanch yellow beans in salted water.

Step 5

Then shape the yellow beans into bunches and wrap each bunch in bacon.

Step 6

Bake the bunches with the potatoes in oven for ca. 8 minutes.
